Amaranth Seeds and Flour

Amaranth
Amaranth is an ancient grain that dates back to more than 8,000 years ago. It was a staple among the Aztecs and was part of many of their religious rituals. The genetic base of these grains were maintained even when their cultivation was banned for decades.

Interest in these ancient grains was revived in North America in the ’70s when they were found to be high in protein; the amino acid, lysine; manganese; magnesium; iron; phosphorus, and others.

Amaranth can be cooked as cereal; or like other grains, such as quinoa, and made into a side dish. It can be popped and added to smoothies, salads and desserts. They can also be added to stews and other dishes. In Mexico, amaranth grain are made into candies called alegria, which is – not surprisingly – the Spanish word for happiness.

Amaranth is gluten-free and safe for those with gluten intolerance.

Flax seeds come from Flax, a cultivated plant related to the Linaceae family. It grows only in cooler regions; and comes in two varieties, brown and golden. Golden flax seeds are best for our consumption. It is consumed as oil (linseed oil) or as whole seeds.

Flax seeds are high in protein, fiber, B vitamins and other vitamins and minerals, such as phosphorus, magnesium, and thiamine. They also contain a good dose of omega fatty acids.

Cooking is not necessary. You can use flax seeds to top dishes, salads, smoothies and more. In India, there are roasted, powdered, and then added to cooking rice.
