shutterstock_281752796Quinoa is a great addition to your favorite salads. They add a nice crunch and nutty taste. Plus, they are packed with protein, fiber, and loads of vitamins and minerals.

Our Light and Healthy Quinoa Salad elevates the usual quinoa salad. We’ve made it light, refreshing and absolutely delicious!

1 cup Envireco Fine Foods Quinoa
1 cup rocket arugula
1 ripe mango, diced
1 red onion, diced
1 cup cooked crab or white fish, chilled and flaked
1 cup tomatoes, sliced
fresh lemon juice
lemon zest
extra virgin olive oil
salt and pepper to taste
chili flakes
honey

First, prepare the ingredients of your salad. Cook quinoa in water. One cup of quinoa shuld be cooked in two cups of water. Set it aside to let it cool.

Prepare the crab or fish meat. Make sure to debone the fish thoroughly. If you are using crab, make sure to remove all the shells. Make sure that this has completely cooled before mixing in with onions, rocket, tomatoes and mangoes. Season with salt and pepper.

Start putting together your dressing. Whisk together lemon juice, salt, pepper, chili flakes, olive oil and honey. Taste to make sure you get the right balance. You should get notes of sweet and sour, with no overpower taste.

If you plan on eating the salad right away, by all means, mix the dressing with the ingredients. Just use enough to cover all the ingredients. Make sure not to use all the dressing as this makes your salad sloppy. Leave the rest of the dressing on the side.
